Pumpkin Spice Vegan Keto Breakfast Waffles
These pumpkin spice Vegan Keto breakfast waffles are absolutely delicious - perfectly crispy on the outside and soft on the inside. They make the perfect breakfast option when you have friends or family over for a weekend brunch. The waffles keep well in the fridge for a couple of days, making them perfect for meal prep.
What should you top these Vegan Keto breakfast waffles with?
The topping options for these pumpkin spice Vegan Keto breakfast waffles are endless. For vegan cream alternatives, Greek-style coconut yogurt or whipped coconut cream work well. An excellent simple icing can be made by mixing a couple of tablespoons of coconut cream with a sugar-free powdered sweetener of your choice, and drizzling it on your waffles. Berries are also a good topping option since they are typically low in carbs and have a fresh flavor. You can also sprinkle some sugar-free powdered sweetener on top.
Do you have to use xanthan gum in this Vegan Keto breakfast waffles recipe?
Unless you want your waffles to crumble and fall apart in the waffle machine, ensure using xanthan gum. This is an essential ingredient in this recipe since it works as a binding agent and holds the waffle batter ingredients together. Xanthan gum helps to replace the elasticity and texture of gluten typically found in regular white flour. When using xanthan gum, a little goes a long way; otherwise, the waffles will turn out gummy.
** Are waffles a good Vegan Keto breakfast option?**
When you have a little bit extra time on hand, waffles are an excellent Vegan breakfast option. They can be made with just a few ingredients, sweet or savory, and are so fun to eat. Also, they can be as thick as you want them or light and crispy, whichever you prefer. The best thing about these Vegan Keto breakfast waffles is that they are grain free and are much lower in carbs, so you don’t have to worry about exceeding your daily net carbs.

Step 1
Start by making the flax eggs. In a small bowl, whisk together 3 tablespoons flax meal with 8 tablespoons water. Cover and set aside for about 15 minutes to thicken. Once the consistency resembles that of an egg, it is ready to use.Step 2
Meanwhile, grease the waffle iron and preheat. In a medium bowl, whisk together almond flour, baking powder, salt, and xanthan gum until well incorporated. Then add in oil and flax eggs and mix until combined.Step 3
Slowly add coconut cream while mixing until the batter is of medium thickness. If your batter is too thin, add in more almond flour.Step 4
Pour the batter into the waffle maker using a scoop. Cook until both sides are evenly golden and cooked through. Serve with your favorite topping, and enjoy.

Terrible mess. I made this recipe exactly as written and it made a horrible mess of my waffle maker. I actually had to toss my waffle maker as a result Something is obviously wrong with this recipe. Needs to go back to the test kitchen.

Can we replace almond with coconut flour?

Avoid this recipe. Makes a gooey mess rather than a waffle
