Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Add the ground almonds to a mixing bowl with the Parmesan and season. Stir to combine and set aside.Step 3
Heat the olive oil in a large pan over a medium heat. Dice the chicken and add to the pan. Brown the chicken all over and cook through. Keep warm and set aside.Step 4
To prepare the sauce, melt the butter in a small pan over a medium heat and add 1 minced garlic clove, sweating until fragrant.Step 5
Add the cream cheese and stir through until melted.Step 6
Add the stock and cream and stir well to combine. Bring to a gentle boil then simmer for 3-4 minutes to thicken.Step 7
Arrange the chicken in an oven proof dish and layer over slices of Swiss cheese.Step 8
Pour over the creamy sauce.Step 9
Sprinkle over the crumb topping.Step 10
Transfer to the oven to bake for 18-20 minutes or until golden brown and completely cooked through.
