Keto Hunter's Stew
Hunter’s Stew, also known as Bigos in Poland, is a hearty and filling meal that makes for an excellent lunch or dinner. Particularly in cold weather, each protein-packed bowl will warm you right up. That’s right, this stew is loaded with bacon and Polish kielbasa (hence the name “hunter’s” stew). For the sake of the Ketogenic diet, a few traditional vegetables have been replaced in the recipe. Your life is also being made a little easier, since you can make this Hunter’s Stew in a slow cooker! This recipe makes about 5 cups total.

Cabbage Raw

Cauliflower
1 cup, chopped
Red Wine Vinegar
1 tbsp

Step 1
Chop the cabbage into fine shreds, slice the mushrooms, and chop the cauliflower into bite-sized pieces. Place these ingredients in the bottom of a slow cooker. Drizzle the red wine vinegar over the vegetables.Step 2
Combine the salt, pepper, onion powder, paprika, cayenne, and caraway seed in a small bowl to make a uniform mix. Sprinkle the seasoning over the vegetables. Mince your garlic and sprinkle this on top, as well.Step 3
Slice the kielbasa into ¼-inch thick slices and chop the bacon. Place the meat in a shallow pan and cook on medium-high heat for about five minutes, covered, or until the bacon is cooked through and the kielbasa has browned edges.Step 4
Transfer the kielbasa, bacon, and their juices to the top of the slow cooker ingredients. For a healthier fat alternative, you can discard the juices and replace them with 1 TB of olive oil. However, you may miss out on some flavor. Cover the slow cooker and cook the ingredients on high heat for 1 hour. Then, stir all the ingredients together and pour in the beef broth.Step 5
Cook on high for 2 hours or on low for 4 hours. Serve with freshly chopped parsley for garnish.

Excellent concept, and easy to make ahead of time, but I had to dock a star simply because the paprika as the primary seasoning in this is just too much. There are many bulkan type dishes that use paprika that I love, but in this one......I'll make it again, but with about 1/4 of the amount.

Yes, cooking much simpler in IP. Sauté bacon and sausage in IP, then add other ingredients and cook on high pressure for 30 min with NPR. Came out great!

Yes! Per serving, the kielbasy accounts for 1g carbs, 12g fat, and 7g protein.

Delicious. Next time I would undercook the bacon because it continues cooking a bit in the slow cooker.

serving size is one bowl? What if my bowl is 2 gallons? Are the macros the same? You need to include more precise measurements

One bowl here is 8 fl oz. You may also go by weight, which is always listed in the nutrition label below the comments.

Loved it, but way too spicy for my husband! I will make it again , but will tweek the spices a bit. It could be a good use for leftover veggies.

In this instance, 1 "bowl" is an 8 fl oz cup of stew. The nutritional info per serving is listed at the very top of the recipe.

Use low-sodium beef stock, cut the paprika in half, add some umami seasoning from Trader Joe’s, and this meal is a winner!

Made this on the stove top. Had to substitute cabbage with 1/2 cup of sour kraut. The soup has the flavor of a Polish, hot & sour soup. It is a wonderful way to warm the tummy.

This was soooooo good! I made everything almost exact other than cutting 1/2 tsp of paprika and I used only half of the cayenne. I was nervous but probably could have handled the whole thing. My family LOVED this and want me to make it again. I made rice for them to put it on so this is perfect for the whole family!!! Thank you so much!!! We really enjoyed this dish! Cut back on the cayenne to 1/8 tsp. Can anyone suggest something to thicken up the sauce a bit?

We used 2 teaspoons of psyllium husk but found this to be way too much and turn the stew into almost a jello consistency and unfortunately ruined the stew. Is either try Xanthan gum next time or use a lot less of the husk.
