Keto Coconut Cauliflower Rice
This simply yet tasty dish infuses cauliflower rice with creamy coconut milk to create an indulgent side dish.

Ingredients
Cauliflower Rice
3 cup, cut pieces
Canned Coconut Milk
1 cup
Lime
½ each - 2" diameter
Scallions
1 large
Cilantro
¼ cup, chopped
Salt
⅕ teaspoon
Coconut Oil
1 tablespoon
Recipe Steps

Step 1
Melt the coconut oil in a large pan over a low/medium heat. Add the cauliflower rice to the pan and season with a little salt. Fry gently for 2-3 minutes, coating in the oil.Step 2
Add the coconut milk to the pan and bring the mixture to a simmer. Continue to cook, stirring regularly until all the liquid has been absorbed – about 5-10 minutes.Step 3
Add the lime juice and zest and stir through with a fork, separating the rice pieces.Step 4
Remove from the heat. Finely dice the scallion and chop the cilantro. Add to the pan, stirring through.Step 5
Serve immediately.

This was really good! I had my doubts but it was delicious. I had it with keto Thai chicken an was perfect together.

Delicious! I served it with coconut lime shrimp and it was the perfect compliment! Mine was runny for some reason but it didn’t distract from the flavor st all.

This is delicious! Thank you! Make sure not to use the whole can of coconut milk if it's more than 8oz. My can was 13.5oz, so I used about half the can. I used Birds Eye frozen cauliflower rice and microwaved it for 4 minutes first before starting this recipe. Now the hard part is only eating 25% of it.

I used one small bag of frozen green giant rice cauliflower and one can of coconut milk. It took longer to cook down the liquid and I thought for sure it would be mushy. The texture was perfect! The fresh lime and herbs take this recipe over the top! I will be craving this dish.

I got the big Costco rice cauliflower in the freezer area. I put 3 bags ( 6 cups). Added 1 can of coconut milk. 3 limes, juiced, salt and a small bunch of scallions. Fast easy, and plenty for leftovers. 1 can of coconut milk for 3 cups rice seemed overkill. Has a Thai flavor, more like a rice. We love it!

Really great :) Creamy, smooth flavor. Had it with some left over low carb ham. Took 15 mins for mine to absorb. Was 185 calories for half the recipe and I used lite coconut milk.

Is there anything I can use besides coconut.? I’m deathly allergic and have to use an eppi pen or Benadryl.

I would try a coconut-free mild curry sauce instead of the coconut milk if you are allergic.

This is delicious!!!!! I’m going to play with the amount of coconut milk as mine took 30 min to absorb but I’m at sea level in a humid environment!! Love the lime coconut flavours! Thought if I added less coconut milk I would add a few tablespoons of toasted coconut for texture!!! A fantastic substitute for a starchy side dish!
