Coconut flour and psyllium husk powder make the base for this Keto mug bread. Once all the ingredients are mixed together in the mug, the bread is cooked for 90 seconds, in which time it puffs considerably! The result is a nice and fluffy bread that is perfect for topping with low-carb jams, grass-fed butter, and nut butter.

How long does this bread take to cool?

Once the bread is “baked” in the microwave, it will take several minutes for the bread to set. Allow the bread to cool sufficiently before consuming, or it will be very soft.

Recipe Steps

    First, combine the coconut flour, psyllium husk powder, sea salt, and baking powder. Combine all the ingredients directly into a tall coffee cup (about 12 oz). You do not need to grease the coffee cup.

    Add in the egg. Mix very well. The mixture will be very thick at this point.

    Combine boiling water and apple cider vinegar. Add this to the mixture as well. Mix extremely well to incorporate any dry pieces.

    Cook for 90 seconds in the microwave. Add an extra 30 seconds if necessary. Carefully remove the mug bread from the coffee cup onto a cutting board. Allow to cool thoroughly. Then cut the mug bread into 3-4 slices and enjoy immediately.

      Mine came out all eggy and soggy... It went in the bin.. I was so disappointed.

        It's ok. I like that's it's not crumbly like most of the mug bread recipes I've tried. I would suggest: after it's cooled enough to handle, cut it into 4 slices. I cut it into 2 and it was too dense and thick to toast it properly. It's not dry, either, so that's good. It tastes literally like nothing, so if you want to add flavor, add spices before cooking. If you like the idea of no flavor or you're topping it, it'll be ok.
