Step 1
Roughly chop the parsley. Crack eggs into a bowl and add the parsley, cottage cheese, salt, and pepper. Whisk to combine.Step 2
Melt the butter in a large pan over medium heat. Pour in the egg mixture and cook for about 3 minutes or until almost set. Optionally, add some dried herbs of your choice.Step 3
Shred the cheddar cheese. Finely chop the turkey. Add to the pan and cook for another 2-3 minutes or until the cheese melts.Step 4
Remove from the heat once the cheese has melted and the omelet is completely set. Optionally, season with some more salt or black pepper to taste. You can also add a pinch of cayenne pepper.Step 5
