How is this jam different from a traditional jam?

Step 1
Preheat the oven to 350/180 C and line a rimmed baking sheet or small cast iron skillet with parchment paper. Unwrap the brie cheese, place it onto the pan/skillet, and set aside. While the oven is preheating, prepare the jam.Step 2
Add the strawberries and lemon juice to a saucepan and place over medium heat. Mash the strawberries as they heat and bring to a simmer. Add the erythritol and chopped basil and continue mashing and stirring until smooth.Step 3
Take the saucepan off the heat and stir in the chia seeds. Let sit for 10 minutes or until the chia seeds have swelled. Transfer the pan/skillet with the brie to the oven and bake for 15-20 minutes or until the center is melted. You can check if the cheese is ready by inserting a toothpick.Step 4
Transfer the brie to a serving plate, or leave it in the cast iron skillet for serving—top cheese with strawberry jam and sliced fresh strawberry. Garnish with fresh basil, and serve!
