Keto Country Frittata

20 ratings

When you have a little extra time on your hands, a frittata is an excellent choice for breakfast! This country style dish has crispy pork sausage, some healthy spinach, and plenty of gooey, white, provolone cheese to adhere all the ingredients. Treat yourself this morning with a little comfort food!

Recipe Steps

  • Step 1

Preheat an oven to 350 degrees. In a bowl, whisk together the eggs, cream, salt, pepper, garlic, onion, and red pepper. Set this aside.
    Step 1
  • Step 2

In a 10” iron skillet, heat the olive oil on medium heat. Make sure the skillet is completely heated before continuing. Then, add in the ground breakfast sausage. Use a spoon to break up the sausage and cook until browned and slightly crispy.
    Step 2
  • Step 3

Rip up the spinach with your hands and toss on top of the sausage. It should cook down quickly. Then, stir it into the sausage.
    Step 3
  • Step 4

Break one slice of provolone into four pieces and place them over the skillet ingredients. Then, immediately pour the egg mixture into the skillet. Cook the skillet on a medium heat until it is almost entirely cooked through. The edge will golden slightly, but the very center of the frittata will still be jiggly. This can take 5-7 minutes. You can adjust the heat to avoid burning.
    Step 4
  • Step 5

Remove the skillet from the stove top. Cut the remaining cheese into fourths, and place them over the frittata. Then, baked the skillet in the oven for about 15 minutes. The cheese will bubble and golden, and the egg will be just cooked through.
    Step 5
  • Step 6

For serving, slice the frittata into 4 parts. You may garnish with chopped parsley at your discretion. Enjoy!
    Step 6

Very good. I changed the directions around. Difference: browned sausage, put in pan, added fresh spinach (did not pre sauté) added egg mix on top. Put in Ninja air fryer on bake at 335 for 15 minutes. Added cheese to top and baked on 335 for 2 more minutes.,

Soo yummy! Great for reheating leftovers. My husband liked it so much he had his own go at it the next morning and added a thin layer of sliced zucchini at the bottom and swapped sausage for bacon, delicious!

Switched the provolone for mozzarella and added cremini mushrooms to the sausage, topped with sliced jalapeno prior to placing in the oven and gosh it was divine!! Love this recipe!

A little bland. Was better with hot sauce. Maybe with some cauliflower country gravy!
