    In a small bowl, add almond milk, ¼ teaspoon vanilla extract, 1/8 teaspoon peppermint extract, and chia seeds. Whisk to combine. Cover the bowl with plastic wrap. Transfer to the fridge. Allow the chia pudding mixture to rest overnight or up to 12 hours in the refrigerator. The chia seeds will swell up and absorb the liquid to form a pudding-like consistency.

    Please clarify what is meant by peppermint extract measurement of 1/2 x 1/4 tsp. Do you mean 1/8 teaspoon?

      Heat it up in microwave till warm, then refrigerate. That's how I got mine to thicken.

    A word of caution - it is very minty! When I make again, I will cut the peppermint way back.

      I thought it was very tasty... maybe a little TOO tasty and it came out more like soup. Lol. However, it is something I will attempt again with half the peppermint and double the chia!

          I am new to this whole thing, can you tell me how much “1 serving” would be? Would it be 1 cup full?

            Tasted good but I never could get it to firm up. It was liquid even though I tried to thicken.

              Try doing it just like the breakfast version. Microwave for 45 secs and mix it for 45 secs. Do that about 4 times and it would be nice and firm in the morning.
