Low Carb Pigs In A Blanket

Nothing beats this classic! The dough is like the real deal and has a great cheese flavor which goes perfectly with the sausages! I love it! The dough is very easy to work with too.

Recipe Steps

40 min

  • Step 1

Preheat an oven to 350 F. Mix almond flour, coconut flour and baking powder in a bowl. Stir to combine.
    Step 1
  • Step 2

Melt the butter and shredded cheese together in a small non-stick saucepan over medium heat until melted. It won’t be completely mixed together, but stir it the best you can with a wooden spoon. Crack in one egg. Stir again the best you can.
    Step 2
  • Step 3

Add melted cheese mixture to the flour mixture.
    Step 3
  • Step 4

Stir with a wooden spoon until a smooth dough forms.
    Step 4
  • Step 5

Place dough on a cutting board and use a rolling pin to roll dough to approximately a 10” x 15” rectangle. Cut 1” strips one at a time as shown in the picture with a pizza cutter and place on one sausage. Roll the sausage up so the dough wraps around once then cut with a pizza cutter. Press to seal the edges.
    Step 5
  • Step 6

Place on a baking sheet and brush each with heavy cream so they brown nicely in the oven. Bake for 20 minutes until golden and the sausages are starting to brown.

Recipe yields 4 servings and calls for 38 little sausages so 9 1-2 bites per serving. Which in my opinion for a snack you could cut that amount in half

My family loved them. I also added the egg to the flour first and they turned out great.

I substituted sunflower meal for almond flour due to a nut allergy. Delicious!

These turned out awful. Too crumbly to cut into strips ended up adding another egg just to hold the dough together.

Will letting dough mixture rest in fridge overnight smooth the texture so there are no grainy worries some mentioned?

I agree with a comment by mrslove. Add egg to dry ingredients and not hot mixture. The dough will be better to work with.

its 9 pieces per serving and both the little sausages and the dough have a lot of calories

They were ok. A little grainy and dry. Don’t expect a Pillsbury Crescent Roll taste! I’d rather just eat the hot dogs plain. 😕

The recipe is for 4 servings so I would divide 38 by 4 to get 1 serving size. 9.5 sausages per serving.
