Onion, white, yellow or red, raw

Cauliflower

Step 1
Peel and finely chop the onion and garlic. Grease a large pot or pan with olive oil and heat over medium heat. Add the onions and garlic. Cook for 5 minutes, stirring constantly.Step 2
Finely chop the bell pepper. Add to the pan and mix well. Continue to cook for another 5 minutes.Step 3
Cut the cauliflower and broccoli into smaller florets. Add to the pan along with tomatoes, salt, vegetable stock, and bay leaves. Mix well and bring to a boil. Reduce the heat to medium-low and cook for 20-25 minutes or until the veggies are completely tender.Step 4
Roughly chop the spinach. Add to the pan. Add the butter and mix well. Cook for another 5 minutes, stirring occasionally.Step 5
Remove and discard the bay leaves. Add more salt or pepper to taste. Serve immediately.
