Low Carb Easy Breakfast Burrito

Who would pass up a low carb breakfast burrito for their first meal of the day? This Keto burrito recipe is made with scrambled eggs and bacon (you can’t go wrong with the classics). Also inside the burrito is cheddar cheese, avocado, and green bell pepper. Everything is wrapped inside a low-carb tortilla wrap with few net carbs. Although the Keto wraps you can buy from the store may have carbs, they will be mostly fiber. You can reduce the carbs in the recipe by substituting the tortilla wrap with some of the suggestions made next.

If you want to cut down on carbs in the burrito, you can substitute the Keto tortilla wrap with other ingredients. Try making your own “tortilla” out of cheddar cheese melted in a pan or oven, or you can buy Keto cheese wraps from a grocery store. For the ultimate Keto wrap, opt for rinsed and dried lettuce leaves or cabbage leaves, which will have the least amount of carbs.

Other breakfast burrito fillings

Your Keto breakfast burrito will already be pretty stuffed. If you want to include other burrito fillings, you may need to omit some of the original ingredients in the recipe. Keep the scrambled eggs and try other common burrito fillings like shredded lettuce, sour cream, or salsa. You can substitute the avocado slices with homemade guacamole too.

You can easily adjust the ingredients to make this Keto burrito vegetarian-friendly. Omit the bacon, and you’re good to go! To substitute the dairy items, replace the heavy cream with almond milk. You can substitute the cheese with nutritional yeast, which will have a similar cheesy flavor.   • Step 1

    Whisk together eggs and heavy cream in a small mixing bowl. Season the eggs with salt, pepper, cumin, garlic powder, and chili powder. If your chili powder has salt in it, you may only need to add an extra pinch of salt.

    Heat olive oil in a pan over medium heat. When the oil is hot, add the eggs. Cook the eggs while stirring them slowly until the eggs are scrambled.

    Transfer the eggs to one side of a Keto tortilla wrap or one of the suggested wrap substitutes. Next, cook bacon in your pan on high heat until the bacon is crispy. Once the bacon has cooled for a minute, add it to your eggs on the wrap.

    Next to the eggs, add a strip of shredded cheddar cheese. Lay thin-sliced avocado and green bell pepper on top of the cheese. Carefully roll your wrap to make the burrito, and slice it in half if you wish.
