Ingredients
Bacon
2 slice - 6" long
Canned Tuna
2 ounce
Arugula
2 cup
Lemon Juice, Fresh
1 teaspoon
Avocado
½ each
Red Onion
¼ small
Cheddar Cheese
¼ cup, grated
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat half a tablespoon of olive oil in a skillet over a medium heat. Roughly chop the bacon and pan fry until cooked through and crisp. Set to one side to cool.Step 2
Whilst the bacon is cooking, thinly slice the onion and avocado. Add to a mixing bowl with the arugula, remaining olive oil, lemon juice, salt and pepper. Toss well to combine.Step 3
Add the cooled bacon, cheddar cheese and tuna to a mixing bowl and stir together.Step 4
Scatter the bacon, cheese and tuna over the salad and toss to combine before serving.
