Can I use fresh strawberries?
You technically could substitute the freeze-dried strawberries with fresh strawberries. However, you cannot substitute by weight because dried and fresh strawberries will have different macros. A medium-sized strawberry has about 1g of carbs. It’s best if you dice your strawberries and either mix or layer them in your dessert.
What are cacao nibs?
Cacao nibs are about as close as a person can get to eating 100% pure chocolate (or in this case, cacao). Technically, cacao is not chocolate because no dairy or sugar products have been added yet. Cacao is more fibrous than chocolate, so it won’t melt. You can find cacao nibs either in the baking aisle or even the health food aisle of your grocery store.

Step 1
Blend room temperature cream cheese in a stand mixer with a paddle attachment until it’s creamy and smooth. Blend vanilla extract and liquid stevia into the cream cheese. You can use a spatula to scrape down the bowl and mix as many times as you need to get fluffy cream cheese.Step 2
Transfer the cream cheese aside to a separate bowl for now and wipe your mixing bowl clean briefly. Whip heavy cream with a whip attachment in your stand mixer until you have a stiff whipped cream. Use the paddle attachment again to blend the cream cheese back into the whipped cream. Mince the freeze-dried strawberries and blend these into the mixture as well.Step 3
Taste the fluffy dessert and add more sweetener or vanilla extract if you’d like. Fill a glass with about 5 ½ ounces of whipped strawberry dessert per serving. Top each serving with a teaspoon of cacao nibs.
