Then, the ham is rolled up, stacked in a baking dish, and baked to perfection. Each roll-up is meaty, eggy, and cheesy! This easy Keto breakfast could not get simpler. What type of ham to use
There are actually some types of deli-sliced ham you should avoid while on the Keto diet. Stay away from flavors that imply added sugar like “maple” or “honey”. Black forest ham would work very well for Keto recipes. Get ham packaged in water if you’re using pre-packaged slices.
Meal prep tips
For Keto meal prep, divide cooled ham roll-ups amongst meal prep containers. Keep the roll-ups stored in your refrigerator for up to 3 days. Microwave to reheat them. Meal prep these roll-ups for breakfast, lunch, or a snack.
Other ingredient options
You can switch out the ham slices and cheese slices for different combinations to keep this recipe interesting. Try substituting the ham with deli-sliced turkey or roast beef. Cheddar cheese can be swapped out for mozzarella, provolone, swiss, colby jack, and many other types of cheese.

Ham Lunchmeat
6 large slice - 6 1/4" x 4" x 1/16" - each 1 ounce
Cheddar Cheese Slice by Horizon Organic

Egg Whole
4 medium
Chives
1 tablespoon, cut pieces
Butter
1 tablespoon
Salt
¼ teaspoon
Black Pepper
1-⅛ teaspoon

Step 1
Preheat an oven to 395 F (200 C). Beat the eggs together in a bowl and add chopped chives. Season generously with salt and pepper, and mix the ingredients well to combine.Step 2
Melt the butter in a large pan at medium heat and add the beaten egg. Allow the egg to settle a little before scrambling. Cook through until scrambled.Step 3
After the eggs have cooked, arrange a slice of ham for each roll-up on a clean sheet of parchment paper. Lay a slice of cheddar cheese over each slice of ham, evenly in the center. Now, turn back to your eggs.Step 4
Once the eggs are cooked, divide them into even portions. Add the eggs to the center of each slice of cheese, leaving a small gap around the edges for rolling. Make sure the eggs are no longer steaming before you roll them up.Step 5
Carefully roll each slice into a tight tube so that the edges overlap and the filling is secure inside. Spray a small baking dish with pan spray. Then, arrange the roll-ups side by side in the dish.Step 6
Transfer to the oven to bake for 10 minutes or until completely cooked through. The cheese should be melted and the ham browned and slightly crisp at the edges. Serve hot.

This is a great way to change up breakfast. I did get my cheese from the deli, and I would recommend if you do this to ask them to cut the cheese thin - or just buy prepackaged thin cheese. Overall, it was still delicious even with thicker cheese. Melty goodness!

Easy to prepare and taste so good! I substituted the cheese with American Cheese and added onion powder instead of chives.

This will be my go to breakfast!! So tasty and filling. I want to try wrapping with bacon but think it may be a little messy. I used Italian seasoning. My husband loved it too.

I eat these every morning for breakfast. It is a great food prep that you can make ahead and easily reheat. I’ve also tried different types of cheeses and seasonings (think spicy or Italian) to vary each batch. So delicious and easy.

I think I might make these, but wrap them in thin sliced bacon before baking. Because everything is better with BACON! Great base recipe to change up as you like!

Simply and quick. Instead of scrambling the eggs I cooked them as one big omelette and cut into 6 pieces. Made the rolling easier.
