  • Step 1

    Cut the cauliflower into small florets. Add to a food processor. Process until it resembles rice.

    Melt one tablespoon of butter in a large frying pan over medium heat. Add the cauliflower and season with salt and pepper to taste. Stir well and cook for 8-10 minutes.

    Add the heavy cream and half of the shredded cheddar. Stir all well and reduce the heat to low. Continue to cook for 3-4 minutes or until the cheese has melted.

    Transfer the mixture to a baking dish (13x7 inch). Using a wooden spoon or a spatula, spread the cauliflower mixture as evenly as possible. Set aside.

    Melt the remaining butter over medium heat. Add the ground beef and season with salt and pepper. Mix well and cook for 10 minutes, stirring occasionally.

    Preheat the oven to 400°F/200°C. Spread the meat evenly over the cauliflower layer. Top with the remaining cheddar. Drizzle ketchup and mustard over everything and bake for 10 minutes.

    When done, remove from the oven and cool for 10 minutes before serving. Cut into six equal pieces and optionally serve with some more sugar-free ketchup. Serve immediately.

      Oh, this is a good one! We added crumbled bacon because who eats a cheeseburger without bacon? I find that fresh cauliflower works better than frozen because I could not get all the water out of the thawed/pre-riced variety. Only adds a few minutes of prep time to rice it fresh.

        I use frozen riced cauli. Dry fry it in a pan to remove the moisture. Love the results

      Added an Oxo cube to the mince instead of salt, otherwise followed the recipe and served with iceberg lettuce, sliced tomato and a few small slices of onion. Loved it, really tasty and will definitely make again

                Absolutely loved this. Added 1/4 onion, garlic, ginger, fresh parsley and coriander and garlic powder to the mince. A single portion was so satisfyingly filling too. A guilt free pleasure

                    Great taste! Use a smaller cauliflower head so that meat is portioned just right! Like the others I added garlic, onion, and seasoning to meat.

                          The family loved this recipe! I used the frozen cauliflower rice, and drained well in a mesh colander. I added chopped red onion, garlic powder and onion powder to the mince, as well as mixing in the ketchup and mustard at that point. Served on a bed of finely chopped lettuce - Tasted just like a Big Mac! YUM
