Keto Raspberry, Prosciutto and Goats Cheese Salad
This delicious Keto salad is loaded with fats, flavor and texture. Our low carb salad recipe is prepared with peppery arugula, sweet fresh raspberries, crunchy toasted almonds, tangy goats cheese, tender prosciutto, and an orange balsamic dressing. This makes a great Keto lunch option or can be served as a side salad to accompany your preferred Keto main.
Are Raspberries Keto?
Berries are one of the best low carb options when it comes to fruit. When eaten in moderation, berries can be enjoyed as part of a balanced and healthy Keto diet and make great additions to both sweet and savory dishes. Raspberries, strawberries, blueberries and blackberries are all Keto-friendly options and can be used interchangeably in this recipe if desired. Please be sure to adjust your macros accordingly to account for any changes made to the original recipe.
Can I Use Different Nuts?
We have used toasted flaked almonds to add extra texture and healthy fats to our low carb salad. You can swap these for an alternative Keto-friendly nut or even seeds if preferred. Walnuts and pine nuts would make great substitutions.

Ingredients
Prosciutto

Arugula
2 cup
Extra virgin olive oil
2 tbsp
Orange juice
1 tbsp
Almonds, raw
1 tbsp, sliced
Balsamic vinegar
0.5 tbsp
Goat cheese
0.5 cup
Raspberries
0.33 cup
Salt, sea salt
0.25 tsp
Black pepper

Recipe Steps

Step 1
Add two packed cups arugula to a large salad/serving bowl. Roughly tear the prosciutto and add to the bowl. Add the raspberries and crumble over the goats cheese. Toss gently to combine.Step 2
Add the flaked almonds to a dry skillet. Toast gently for 3-4 minutes over a low heat, turning halfway through. The almonds should be lightly golden all over. Keep an eye on these as they can burn quickly. Sprinkle the almonds over the salad.Step 3
Add the orange juice, balsamic vinegar, olive oil, salt and pepper to a small bowl. Mix well to combine. Drizzle over the salad and toss gently to serve.
