Easy low-carb tzimmes is one of our favorite Keto Passover recipes. This colorful dish is a beautiful combination of roasted vegetables and almonds with a mild cinnamon flavor. This recipe is effortless to prepare, and it only takes about 20 minutes of your actual work to prepare the veggies. Adjust the amount of cinnamon according to your taste, or add a few drops of orange extract. Bake the veggies until completely tender and slightly crispy on the outside. You can store the leftovers in the refrigerator and gently reheat them in the oven when ready to serve.

If this sweet cinnamon version doesn't sound good, season the veggies with red pepper flakes and olive oil instead. You can also brush the vegetables with some melted butter to taste.

Peel and roughly chop the beets. Roughly chop the carrots. Trim the Brussels and remove the outer leaves. Cut each in half. Roughly chop the almonds.Step 2
Add the water, brown sugar replacement, maple syrup, and cinnamon to a medium bowl. Whisk well to combine. Optionally, adjust the amount of cinnamon according to taste.Step 3
Add the chopped vegetables and almonds to a large bowl. Pour in the prepared cinnamon mixture and season with salt and pepper. Toss to combine.Step 4
Preheat the oven to 200°C (400°F). Line a large baking tray with parchment paper. Arrange the vegetables over the prepared baking tray and bake for 30-40 minutes or until the vegetables are completely tender.Step 5
