Keto Cheeseburger Salad

8 ratings

It’s surprising when you realize all the components of a cheeseburger make great salad ingredients! A fresh bed of greens are dressed in a scratch-made thousand-island dressing. Then the salad is topped with other classic cheeseburger ingredients like tomatoes, charred beef patty, and a layer of melted cheddar cheese.

Recipe Steps

  • Step 1

For the thousand-island dressing, whisk together the mayo; ketchup; olive oil; just a pinch each of the salt, cumin, and onion powder (about 1/16 teaspoon each per serving); lemon juice, and minced pickle. Most processed relishes have added sugars, so you may need to hand-mince the pickle (or sub in pickle juice in place of lemon juice). Set the dressing aside in your fridge to keep cool.
    Step 1
  • Step 2

Mix together the ground beef with the salt, pepper, onion powder, and garlic powder. Leave the ground beef crumbled in chunks - do not form a patty.
    Step 2
  • Step 3

Heat the olive oil in a small pan over medium heat. Toss the crumbled chunks of seasoned beef in the pan. Cook until crispy brown all over. Then, reduce your heat to low and layer the cheese over the cooked beef, cooking until just melted. Set the burger aside to cool slightly.
    Step 3
  • Step 4

Arrange a serving plate with a bed of fresh greens, halved grape tomatoes, the cooked cheeseburger, and thousand-island dressing. You can serve the dressing on the side, toss it with the greens before plating, or simply drizzle over the top.

My thoughts went from “Meh” in the beginning to “pretty good” to “Gee, that was fantastic!” by the end. The sauce is fast food divine.

I’m not a big red meat eater so substituted Turkey for the red meat. Very good just not sure if the net carb change.
