  • Step 1

    Roughly chop the chocolate and transfer it to a bowl. Add the cream and butter to a saucepan and place it over medium-low heat. Heat the mixture until the butter melts and the liquid reaches a simmer. Take the saucepan off the heat as soon as you see tiny bubbles forming.

    Pour half the cream mixture over the chocolate and let it sit for 2-3 minutes. Using a spatula, gently stir in small circular movements to combine. If you still see chunks of unmelted chocolate - that's fine.

    Pour the remaining cream over the chocolate. Stir until you have a smooth, shiny chocolate mixture. Line a shallow baking dish with plastic wrap.

    Pour the chocolate mixture into a baking dish and cover the surface with plastic wrap. The plastic should touch the surface of the chocolate mixture. Place in the freezer for about 2 hours.

    Add the cocoa powder to a plate or bowl. Using a small ice cream scoop or spoon, pick up a little bit of the set chocolate ganache mixture and roll it between your hands to shape it into a ball. Directly place each chocolate ball in the cocoa powder and gently toss it around to cover it completely.

    Put the truffles on a clean plate and place them in the fridge to set again for at least 30 minutes. Serve for dessert or as a snack with some coffee or tea.

    These are good for that sweet tooth craving. A little mess to make but worth it. Next time I'll probably add almonds to the center of the truffle.

      Really bitter. Too bitter to eat let alone enjoy! I used no sweetener and non sweetener chocolate but I thought recipe said unsweetened chocolate. Not nice. Texture good though so maybe with sweetener added would be good.

            These are AMAZING. Sooo good that surely they can’t be keto? If you’re craving chocolate, one of these will definitely do the job. Hard to stop at one though - be warned
