Keto Tahini Crunch Bars made using Keto frosted “rice” cereal blended with deliciously creamy and slightly bitter tahini. The flavor of the tahini pairs so well with the sweetness of the chocolate! The bars are effortless to make and come together in under 15 minutes. These would make for an excellent kid-friendly snack as well! The high protein in the Keto cereal makes for a fantastic afternoon snack and can easily fit into pre and post-workout meals when you need something sweet.
What kind of chocolate should I use?
Please use dark chocolate, which is 90% or greater. If that is too dark for you, add some monk fruit sweetener to taste before pouring the melted chocolate into the bars. You can also find Keto-friendly dark chocolate that is already sweetened with stevia.
Where can I find tahini?
Tahini is sold at most supermarkets next to the peanut and almond butter.
Where can I find Keto-friendly “rice” cereal?
You can purchase cereal like this on large online retailers like Amazon.
Do I need to temper the chocolate?
No, adding the coconut oil will allow the chocolate to solidify at refrigerated temperatures.

Monk Fruit Erythritol Blend

Step 1
In a medium-sized mixing bowl, combine the Keto frosted “rice” cereal with the tahini and monk fruit blend. Mix well. Pour into a 7” x 11” pan or a similar size that is loosely lined with parchment paper.Step 2
Press the cereal into the pan. You need a silicone spatula to help to smooth the cereal to the corners of the pan. You will want to make sure the cereal is nicely packed.Step 3
Break the chocolate into bite-sized pieces in a microwave-safe bowl and add the coconut oil to it. Microwave it on high for 1 minute. Stir it well with a heatproof spatula. Microwave it again in 30-second intervals until it is completely melted.Step 4
Pour the chocolate over the bars. Spread to the edges with an offset spatula. Chill the bars until firm (overnight is best).Step 5
The next day, use a sharp knife to cut the bars into 18 square pieces. The bars will store well in an airtight container in the fridge. You can also store them in a ziplock bag in the freezer until ready to use.

Melt the coconut oil Mix everything together Except the chocolate. Line a 8x8 pan with baking parchment or wax paper. Spread the mixture into the pan & press it in. Chill it. Meanwhile melt the chocolate in a double boiler or the microwave gently in intervals. Spread melted chocolate on top of bars. When chocolate is chilled & solid, flip it over & out of the pan and cut into bars with a large knife. Enjoy! parchment paper.

Good question! I would warm the tahini gently in a pan, once loose pour in the ‘rice’. Gently mix. Pour the mix into a shallow dish or tray (line with clingfilm for easy removal). Put it in the fridge to chill. Melt the chocolate, coconut oil, vanilla and the monk fruit/sweetener in a separate pan and warm until melted and glossy. Let cool slightly. Pour over the chilled ‘rice’ mix. Depending on the temperature put it in the fridge for an hour to set. Cut into 18 portions.
