Step 1
Add the pine nuts to a dry skillet over a low/medium heat. Toast gently until lightly golden all over.Step 2
Roughly chop the tomatoes and slice the olives. Add to a serving bowl along with the lemon zest and crumble in the feta cheese.Step 3
Roughly tear the basil and add to the bowl. Season with pepper, drizzle over the oil and scatter with the pine nuts. Toss to combine and serve.
