Keto Mediterranean Shrimp Zoodles
The Mediterranean Keto diet is an excellent combination of your favorite low-carb foods and beautiful Mediterranean flavors. This easy dish is an excellent and Keto-friendly twist on classic Italian shrimp spaghetti. It's super easy to prepare, and in less than 30 minutes, you will have a wonderfully healthy meal the whole family can enjoy. Adding one garlic clove or some garlic powder will improve the overall flavor, but it's completely optional. These lovely Keto Mediterranean shrimp zoodles can be served immediately or stored for the next day. Enjoy!

Ingredients
Extra virgin olive oil
2 tbsp
Butter
1 tbsp
Shrimp
9 oz
Zucchini
10 oz
Tomato sauce
2 tbsp
Peppers Hot Green Chili Raw
0.5 pepper
Rosemary, dried
0.5 tsp
Parmesan cheese, fresh (hard)

Fresh Parsley (for flavoring only)

Recipe Steps

Step 1
Slice the ends off the zucchini and place it on your spiralizer. Turn the spiralizer and create zucchini noodles. Repeat until you have used all the zucchini. You can use store-bought zoodles if available.Step 2
Heat a large pan over medium-high heat. Add the zucchini noodles and cook for 3-4 minutes. Stir occasionally.Step 3
When done, remove from the heat. Drain the liquid from the pan and remove the noodles. Set them aside.Step 4
Finely chop the parsley. Thinly slice the chili pepper. Add the olive oil and butter to the pan and heat over medium-high heat. Add the shrimps, tomato sauce, pepper, dried rosemary, and parsley. Stir well and cook for 5-6 minutes.Step 5
Transfer the zucchini noodles to serving plates. Top with the prepared shrimps and serve with shredded parmesan. Optionally, garnish with some fresh parsley or add some olive oil before serving.

I could not eat half of this delicious dish. I came home from a rough day put this together real fast and it tasted like I had worked all day on it.
