Recipe Steps

  • Step 1

    Melt the chocolate chips in the microwave with the coconut oil until melted. Use 30 second increments and stir after each heating until melted.

    Scoop 1 teaspoon of melted chocolate into each of the liners and spread smooth. Freeze until solid.

    Once the first layer is solid, gently warm peanut butter in the microwave. Scoop 1 teaspoon of peanut butter into each liner and spread smooth. Freeze again until solid.

    Reheat the once melted chocolate mixture and evenly distribute the rest of the chocolate onto the peanut butter layer, spreading smooth.

    Great alternative to my favorite - Reeses with a few healthier changes. I used a double boiler for melting dark chocolate chips (never anything "sugar free") and Kroger Natural P.B. (NO PALM OIL)...placed jar in warm water for about 10 minutes. I don't use a microwave due to they destroy the majority of nutritional value in foods. Was well worth the extra effort.

    These are such a treat, I omitted the added sugar, and are delicious. They are rich tasting. I added chopped pecans for crunch.

          If it's because you don't want the added coconut taste, use the LouAna brand, not the liquid oil kind but the kind in the white tub that is solid below 76 degrees. That way, it will melt to mix with the melted sugar-free chips (I like Lily's brand), then harden in the fridge or freezer until you want one. The LouAna brand does not taste or smell like coconut. If you are allergic to coconuts, use butter.

            Question I have the Hershey’s chipits chunks dark chocolate it’s keto grade A bit this recipe calls for unsweetened chocolate so how much do i use for mine ?

              You can use whatever chips at the same quantity. 70% dark cacao is better than unsweetened. Artificial sweeteners are very hard on the liver and the body does not know how to process them...I avoid anything artificially sweetened at all costs!

              The recipe calls for sugar-free chocolate, but it doesn't have to be unsweetened. It can be sweetened with a sugar-free sweetener or blend of sweeteners that you prefer. I use Lily's chips for things like this. If you use unsweetened chocolate and unsweetened peanut butter, it will not taste like a 'real' peanut butter cup. As for how much to use, that's up to your own taste, but I'd try 1/4 cup of powdered (not granulated) low-carb sweetener or an amount of liquid low-carb sweetener of the equivalent sweetness. You can also try adding a little sweetener to the peanut butter, too, if you want.

              Bonus!! 😄 You can skip the oil and better to use dark chocolate than unsweetened. Oil just makes it easier to spread.

              Sure, but you'll probably want to add sweetener too. I'd try 5 tables of cocoa powder along with 1/4 cup of powdered low-carb sweetener and maybe an extra tablespoon of butter. Adjust to suit your own tastes.
