If you are a breakfast person, you will love this quick and easy Keto breakfast recipe. It starts by making a Keto mug biscuit, then slicing it and dunking it into an egg custard batter. The battered french toast pieces are sauteed in plenty of ghee and then served with monk fruit syrup. It is so delicious and easy to make! The recipe is especially friendly to those who are the only Low Carb person in their household.

What kind of syrup should I use?

Please use any Keto-friendly maple syrup of your choice. Keto-friendly chocolate syrup or hazelnut butter would also be delicious.

How long does the mug biscuit take to microwave?

The biscuit should take about one minute to bake in the microwave. Then it is turned out onto a cutting board and sliced into four slices.

Can I top the french toast with butter?

That is totally up to you! This Keto recipe was made to be dairy-free, but if that is not a concern for you feel free to cook the french toast in butter and top it with butter as well.

    In a large microwave-safe coffee mug, mix the two flours, baking powder, powdered erythritol, kosher salt, an egg, and avocado oil.

    Cook it in the microwave for one minute until puffed and cooked through.

    Turn it onto a cutting board and slice it into four slices using a bread knife.

    In a small bowl, combine the remaining ingredients with a whisk. Allow the bread slices to sit in the custard mixture to soak up as much of the liquid as possible.

    In the meantime, preheat a medium-sized skillet over medium-high heat until hot. Add the ghee and swirl the pan to coat it. Add in the french toast slices that have been soaked in custard.

    Allow cooking on the first side for 1-2 minutes or until golden. Flip and repeat on the other side. Plate the french toast slices and top with Keto-friendly maple syrup.
