Keto Almond Bites
Keto Almond Bites are a popular snack you can purchase, but why not make them at home? The recipe uses prevalent keto/low carb ingredients and is very simple to make.
What special equipment do I need?
A food processor and a standard-sized loaf pan are all you need.
Can I use another kind of nut instead of whole almonds?
Whole almonds are chopped with the almond flour in the food processor for added crunch and texture. Other nuts like walnuts or pecans would be a great addition as well just directly swap out the whole almonds 1:1 with the other nut.
How do I handle the final product?
Be sure to allow the finished product to cool completely before attempting to remove it from the pan and cutting them into 1 ½” bite-sized pieces. If the final product is warm at all it will crumble.

Almond Flour
1-½ cup
Almonds, Dry Roasted, Unsalted

The Ultimate Icing Sugar Replacement by Swerve
¾ cup
Coarse Kosher Salt by Morton
¼ tsp
Pure Baking Soda by Arm & Hammer
1-undefined tsp
Raw Egg

Almond Extract

Step 1
Preheat an oven to 350 F. Combine almond flour and whole almonds in a food processor. Pulse until whole almonds are broken down but still visible.Step 2
Add the remaining ingredients and process until the dough comes together into a ball.Step 3
You will first see the mixture look crumbly, then it will start to pull together and then evenly form a ball.Step 4
Prepare a loaf pan with nonstick cooking spray. Then press the dough evenly into the bottom of the pan. Bake for 20-25 minutes until golden brown on top.Step 5
Allow cooling completely before attempting to unmold it. Once completely cooled, use a bread knife to carefully cut the mass into 1” to 1 ½” strips and then cut each strip into small squares.Step 6
Be sure to use the bread knife appropriately by sawing back and forth allowing the knife to do the work. This ensures the cleanest cuts. Store in an airtight container and enjoy snacking on these throughout the day.

I didn’t change the recipe but I rolled the dough into around 2 inches and then flattened the balls with a fork, like you do for peanut butter cookies. They baked for 7 min or so at 375F. Delicious!
