Keto Candy Chocolate Granola Bars

You are probably familiar with (and love) granola, but it is not typically a low carb food. But fear not! We have designed a delicious Keto granola recipe made with unsweetened coconut flakes, almond butter, sliced almonds, and sugar-free M&Ms. The mixture is sweetened with monk fruit which is a much easier and healthier alternative for the gut. These bars are also packed with healthy fats to help you fill up on good calories throughout the day. We like to incorporate these after a high-protein meal when we want to add more fats to our macros (for those who calorie count). These would be a great treat on a bulking diet as they are nutrient-dense and high in calories.

What are the best chocolate candies to use?

We have used a sugar-free chocolate candy that has been sweetened with stevia. If you cannot find this or want to use something else, you can substitute the chocolate candies for stevia-sweetened chocolate chips. If you are more interested in the Paleo style of eating, you can substitute the candies for dried fruit like raisins or dried blueberries.

How do you get these bars to hold together?

To get these gluten-free bars to stick together. The mixture is pressed down firmly with a spatula before being baked. The mixture of coconut oil, almond butter, and monk fruit liquifies in the oven and surrounds the ingredients. Once the mixture cools down, it solidifies. To make the bars easier to cut, please chill them in the refrigerator before slicing them.

Is granola Keto?

Granola is not typically Keto! However, you can make granola Keto by replacing the oatmeal with unsweetened coconut flakes and nuts like sliced almonds.

To make the ultimate pairing, serve Keto M&M Granola Bars with our Best Keto Prosciutto Scrambled Eggs! One of our favorite recipes!

I agree. Top says 12. Then cut into 8. What is correct?

It should be cut into 12 bars. Thank you for catching that!

I’m confused. Does this recipe make 8 or 12 bars? Thanks!

It makes anywhere from one giant bar up to 100 tiny bars, just depends on your knife technique 😆
