You will love this easy Instant Pot vegetarian pasta dish! Deliciously tasty palmini noodles are cooked into a low carb tomato basil sauce with diced white onions. Then it is tossed with an Italian-style hard cheese for added flavor. The final dish is topped with more cheese. Low carb palmini noodles make for a great side dish that the whole family will love!
What are palmini noodles?
Palmini noodles are made from the hearts of palm, which is the center part of certain palm trees. The flavor is sweet with a slight al dente texture and a lemony flavor that pairs well with many sauces. The noodles are high in fiber and very low carb, making them an excellent choice for those looking to control blood glucose.
What type of sauce should I use?
We opted to use store-bought sauce to make this recipe easy to make. Look for a sauce that has no added sugar and low carb.
Does this side dish reheat well?
Yes, these noodles stand up well to reheating and are delicious eaten the next day. While they are still edible a couple of days after that, eat them no later than the next day for the best flavor.

Step 1
Drain the palmini noodles. Squeeze out some of the excess water from the noodles without crushing them.Step 2
Preheat an Instant Pot on the Saute setting until it says HOT. Add in the olive oil and use a spoon to coat the pan. Add in the diced white onions and cook until the onions are translucent, about 30 seconds to one minute.Step 3
Add in the tomato basil sauce and the water. Mix it well with a spoon. Taste, adding a pinch of salt if desired.Step 4
Place the noodles into the pot and mix gently. Set the Instant Pot to the “keep warm” setting until the noodles are hot, about 5-7 minutes. Since the noodles started at room temperature they just need to be heated gently.Step 5
Gently toss the noodles together with the cheese. Be sure to use a rennet-free cheese for this vegetarian dish. Serve immediately.
