Wow. This salad is an absolute favorite from now on, specially for meal-prep and when traveling, I used pork rinds as tortillas chips.

Trying this one because to the reviews and because I’ve got lots of tuna fish and eggs on hand! If there isn’t enough parsley left in the garden, I think I’ll try something wild foraged like sorrel.

This was so delicious, I had it with a mozzarella crips that I made on the mini waffle maker. I have a love hate relationship with eggs and tuna but i think this was the only way to eat eggs and tuna. I had no parsley and no scallions but used cilantro and celery instead. Can’t wait to try it again with parsley and scallions.
