Ultimate Keto Denver Omelette Casserole
Denver omelettes are an American breakfast classic! You can easily make this easy Keto recipe in a baked casserole dish and have breakfast prepared for the whole week. If you’re feeding more than one, then you can have a weekend breakfast on the table in less than an hour. Each slice is hot, tender, and cheesy. For the ‘Denver’ portion of the casserole, you have diced bites of onion, green bell pepper, and cooked ham. The whole filling is coated in cheddar cheese before being filled with a seasoned egg mix. The toughest part will be deciding if you want a middle piece or a crispy corner piece.
What type of ham should I use?
Your ham will need to be precooked before you make this recipe. You can use packaged ham found in the refrigeration aisle at your grocery store, and it may even come diced already. If that’s not available, go to the deli counter and ask for the amount of ham you need either in very thick slices or in a whole piece. Then, you can dice the ham at home.
What to eat with the omelet casserole
If you like to add a condiment to your omelets, Carb Manager recommends sour cream or guacamole. These toppings add fat and are low in carbs. You can also skip the guac and enjoy some freshly sliced avocado on top or on the side of your Keto meal. Fried bacon or Keto sausage bites can go along with the casserole for the extra-hungry.
Which bell peppers are the healthiest?
Did you know that different colors of bell peppers have different amounts of carbs? The sweeter the pepper, the more carbs per ounce you’ll eat. Green bell peppers are less sweet and are often used in savory dishes. They’ll have the least carbs per ounce.

Step 1
Preheat an oven to 350 F (180 C) and spray a glass baking dish with pan spray. Chop the green bell pepper, onion, and ham into even pieces, and mix them up together. Spread the mixture inside the bottom of the baking dish.Step 2
Top the ingredients with the shredded cheddar cheese. To make the egg mixture, melt the butter in the microwave and whisk it together with the eggs, salt, and pepper. Pour the mixture into the baking dish.Step 3
Bake the casserole for 40 minutes uncovered or until the center is solid and the top is golden brown. Let the casserole cool for 5 minutes before slicing. Enjoy hot.

Wasn’t really looking forward to this as I’m usually a brown toast with better for breakfast person. Made the night before and put it in microwave for a min. Super tasty and I have enough for another 5 days.

I agree with the many others who noticed how much time can be saved by simply making the omelet in an omelet pan (or similar pan). Otherwise, a tasty filling breakfast with room for lots of variety.

Tasted very good. Very ideal for large batches or feeding a family that may consist of Keto-ers. However, if you just making one or two servings save yourself 35 minutes in your busy morning and just make a Denver Omlette….they contain exactly the same ingredients and so they taste exactly the same.

This is absolutely yummy. I substituted mushrooms instead of the peppers and sauteed them with the onions and ham in the butter.

Enjoyed this! Made it ahead the night before but kept the egg mixture separate from the meat and peppers and assembled in the morning. Thanks to others’ comments I sautéed peppers and onions ahead of time. It was a little dry, so I may add a few tablespoons of cream and only bake 35 minutes instead of 40. Will freeze some slices for future meals. Thanks!

It's better if you saute the onions in butter,until they are soft then saute the chopped ham for 5 minutes before adding it to the casserole.

I used the ingredients listed, but my method was a little different.. Instead of melting the butter to add to the eggs, I used the butter to sauté the onion, bell pepper and ham, then poured the eggs over and topped it with cheese before baking. It was good and I will make this again!

I used red onion since I was out of white and it was great! Add some avocado on top and some hot sauce. Perfect! I used an 8x11inch glass dish and the cooking time was correct for that (40 min)

Peppers are part of the nightshade family of plants along with potatoes, tomatoes, eggplants. With my arthritis , I can't eat them, so I subbed mushrooms. Delicious! Thanks. I added chopped celery for a bit of crunch.

Made recipe as is but used half cheddar cheese and half mozzarella cheese. This is great! My husband isn’t keto but loves trying all the recipes with me.

I was worried I wouldn't like this and was super wrong! This was full of flavor and really good. I did not saute before putting in baking dish and it turned out fine. I cut the veggies small so that might be why.

Made this today and it was fabulous. Added asparagus and used back bacon as well as mozzarella but otherwise followed recipe. So tasty and lots left. For the rest of the week. Thanks 😊❤️😊
