Keto Shrimp Egg Fried Rice
Shrimp are cooked with bell peppers and cauliflower rice before adding beaten egg to create a keto friendly version of this typically carb heavy dish.
This shrimp fried egg rice makes for a great light lunch or an accompaniment to stir fried pork.

Ingredients
Raw Egg Whole
2 small
Coconut Oil
2 tablespoon
Cauliflower Rice
1-½ cup, cut pieces
Red Onion
1 tablespoon, chopped
Garlic
1 clove
Tamari Sauce
1 tablespoon
Scallions
1 medium - 4 1/8" long
Cilantro
1 tablespoon, chopped
Shrimp
½ cup
Red Bell Peppers, Raw
½ large - 3" diameter x 3 3/4"
Sesame Oil
½ tablespoon

Step 1
Heat a tablespoon of coconut oil in a frying pan or wok over a medium heat. Mince the garlic and finely dice the pepper. Add to the pan with the diced onion and sweat until tender.Step 2
Add the cauliflower rice and the shrimp to the pan, stirring well to combine. Fry for 3-4 minutes until cooked through.Step 3
Beat the eggs together. Make a well in the center of the mixture and pour in the beaten egg mixture. Let the egg settle for a moment and start to cook, then break apart gently with a wooden spoon, folding into the rice mixture.Step 4
Add the tamari and sesame oil and mix well to combine.Step 5
Roughly chop the cilantro and slice the scallions, scatter over the rice to serve.

My shrimp were overcooked, and the dish was dry. What am I doing wrong. It was tasty...but dry. I know it's the cook.

Made this last night for lunch today on my day 1 of the keto diet. It’s delicious! And so filling. Only had half of the serving. And should I add that I don’t ever like cauliflower? Saving it for lunch/ dinner sometime this week. Thank you for a great recipe!!
