Keto Gambas al Ajillo is a delicious dish made using fresh shrimp cooked in plenty of garlic-infused extra virgin olive oil. The flavor is outstanding and is a must for anyone that loves Keto Spanish Food. Extra virgin olive oil is sauteed with twenty cloves of garlic and fresh spicy pepper. Shell-on shrimp is added to this olive oil mixture and sauteed until perfectly pink. Feel free to use shelled shrimp as they are easy to eat. We like to use the shell for added nutritional value and flavor! This dish would be great served with Keto or low carb bread to dip into the lovely olive oil sauce that is made. The final dish is topped with sherry, parsley, and lemon zest.

Serve this dish in an oblong pan, so the shrimp is more or less in a single layer with the olive oil sauce visible around the seafood.
What if I don’t have fresh spicy peppers?

Step 1
If using frozen shrimp, make sure the shrimp is completely thawed. Once thawed, drain the shrimp very well. Sprinkle them with 1 tsp kosher salt.Step 2
Preheat a large nonstick skillet over medium heat. Thinly slice the garlic cloves and pepper. Add in the olive oil, the sliced garlic cloves, and sliced cayenne pepper. Saute the garlic until it has browned nicely. Sprinkle the mixture with ¼ tsp kosher salt.Step 3
Add in the shrimp and cook until the shrimp have just turned pink. Season the shrimp with the remaining kosher salt, sherry, chopped parsley, and lemon zest. Feel free to serve the dish with lemon wedges if desired.

cooked shrimp tastes fine chilled. i make shrimp ‘salad’ all the time.
