Is hummus Low-Carb?
Traditional hummus is made primarily of chickpeas, which are not Low-Carb. All the remaining ingredients are Low-Carb and compliment the texture and flavor of the hummus. This hummus uses cashews instead of chickpeas, making for the ultimate replacement. It is chocolate flavored, containing cocoa powder, erythritol, and tahini for creaminess.
What can you eat this Low-Carb chocolate hummus with?
Since this dip is sweet, you can eat it with Low-Carb fruits like strawberries or raspberries. You can also stuff it between 2 Keto cookies to make a cookie sandwich.
What is the best chocolate for this Keto dip?
To limit the carbs and keep this recipe Keto-friendly, we are using cocoa powder. While you can use a sugar-free chocolate bar to make this chocolate hummus, it usually contains more carbs. Using a chocolate bar will also increase the preparation time since you must melt it and fold it in.
Can you prepare this Low-Carb chocolate hummus beforehand?
Unfortunately, no! Soaking cashews reduces their shelf life immensely. This is why it is best to consume the chocolate hummus within one day.

Step 1
Place the cashews in a bowl and cover with boiling water. Soak overnight or up to 12 hours. Drain the water and rinse the cashews.Step 2
Transfer the cashews to a high-power blender. Add the water, tahini, cocoa powder, erythritol, vanilla extract, and salt. Blend for 2-3 minutes.Step 3
Scrape off the sides of the blender. Blend for another 2-3 minutes until smooth. Taste the hummus and adjust the sweetness.Step 4
Transfer the hummus to a serving plate. Swirl using the back of a spoon and garnish with a drizzle of tahini and some chopped cashews.
