You can buy coconut butter at the store or you can make it yourself using a food processor! It is very easy and only has a few simple ingredients. Using unsweetened coconut flakes ensures that the coconut butter has 0 net carbs, which means you can top anything with it to get some extra healthy fat in your diet!

  • Organic Unsweetened Coconut Flakes by Great Value

  • Step 1

    Place coconut flakes in a large food processor. If you have a small food processor simply cut the recipe in half and do two batches. It is important to be sure you have enough coconut flakes in your food processor so it will have enough to spin and process the coconut flakes.

    Blend the coconut flakes until they liquify, the time will depend on your food processor. This could take upwards to 20 minutes. At first it will look sandy, but be sure to keep blending it until it starts to liquify. Be sure to scrape the sides down at least 3-4 times to ensure all the coconut flakes are being processed.

    Once coconut is liquefied, add the salt, vanilla extract and Swerve. Add Swerve to your personal taste! I added 2 tablespoons.

    How does 6.5 g total carbs less 5.3 g fiber come out to 0 g net carbs? Math has never been my strong point but however many times I work this, it still comes out to 1.2 g net carbs.

      You take off the polyols aswell.6.5-5.3-1.2=0

      They used Swerve in it also. Think the difference is the sugar alcohols from it, maybe???

    Can you make this in the Vitamix?

      I've found several videos that say you CAN make it in your Vitamix. Start low, then gradually go up to as high as it goes. Either use your tamper or stop every minute or so to scrape down the sides. I'm excited to use my Vitamix, too.

    I don’t like that they have it posted as 1 serving, how much is that? A tablespoon, a teaspoon? Not very helpful.

      That's roughly a tablespoon.

      The recipe yields 20 servings. So, divide it into 20 equal parts. Use old ice cube trays or (for example) I have tiny plastic containers that are for 2 tblsp dressing/sauces that I had bought to portion out my fat bombs. Mini muffin tin would work to help divide it out, too.

        Coconut butter (AKA Manna) is wonderful on keto bread, open face, with a dusting of cinnamon. This recipe sweetens the butter for you, for store bought ones, I add a stevia blend or monk fruit dusting on top with the cinnamon. Great snack or quick lunch depending on your macros.

        I eat a tbsp periodically for "dessert". Can use it in baking, too. Use it like peanut or almond butters.

      Made a double batch. Added cinnamon, because it adds sweetness. I LOVE cinnamon 😍😍😍. Tomorrow I bake!!!!

      I made it I added a teaspoon of ghee butter and 1/16 of a teaspoon of coconut extract. It has the texture of cheesecake but smoother
