Preheat the oven to 350F/180C and line a baking tray with parchment paper. Cut the cauliflower into florets, and slice the mushrooms and bell pepper. Arrange the cauliflower florets, sliced mushrooms, and bell peppers on the baking sheet lined with parchment paper.Step 2
Sprinkle chili powder, cumin, onion powder, paprika, garlic powder, salt, and black pepper. Toss the vegetables to coat evenly in the spice mixture. Transfer the baking sheet to the oven and bake for 30 minutes until the vegetables are tender and slightly charred.Step 3
