Keto Breakfast Salad
A salad for breakfast? For those who simply don’t like carb-loaded breakfast foods, like pancakes and muffins, a breakfast salad is a nice change of pace from egg cups. This breakfast still has savory traditional favorites, like chopped bacon and a hard boiled egg, with additional chopped veggies and a light and tangy vinaigrette.

Step 1
Start by making your dressing. Whisk together the olive oil, vinegar, lemon juice, salt, pepper, italian seasoning, and garlic powder. Set the dressing aside in your refrigerator for later.Step 2
Cook your bacon strips to a crisp over your stove. Set the bacon aside to cool, then chop into chunky pieces (or bacon bits at your discretion).Step 3
Hard boil an egg by boiling it in a pot of water for 12 minutes. Flash the hard boiled egg with cold water before peeling and slicing in half.Step 4
To arrange the salad, set your chopped lettuce on a plate. Top the lettuce off with halved grape tomatoes, chopped cucumber, and crumbled feta. Finally, add the bacon bits and egg.Step 5
Serve the salad with dressing on the side, or toss the salad in the dressing before serving.
