Keto Strawberry Cream Cheese Cookies
These little bite-sized cookies are soft pillows of cream cheese heaven! Each cookie embeds a slice of strawberry, adding just a touch of extra flavor that pairs perfectly with sweet vanilla and coconut flour. Butter, Salted
2 tablespoon
Stevia In The Raw, Bakers Bag

Raw Egg, White

Vanilla Extract

Coconut Flour

Step 1
In a stand mixer with a paddle attachment, cream together the cream cheese, butter, and stevia. Mix until you have a creamy, lump free batter.Step 2
Mix in the egg white and vanilla. Again, make sure you mix until there are no lumps.Step 3
Mix in the coconut flour and baking powder. You should end up with a fairly sticky but workable batter.Step 4
Transfer the batter to a piece of parchment or wax paper. Use the paper to roll the batter into a rectangular log (you can also make a round log if you prefer) about 8 inches long. Wrap up your log and set it in your freezer for 30 minutes.Step 5
While your cookie log is setting, prepare 16 slices of strawberry. Pat them dry with a paper towel and leave them out to air dry for the remainder of the recipe. When you’re ready to bake your cookies, preheat your oven to 350 degrees.Step 6
After your cookie log has set, slice the log into 16, ½-inch thick cookies and lay them on a sheet tray lined with parchment paper. The cookies should be about 2-bite cookies in size. Bake the tray of cookies for 8 minutes (no strawberries yet).Step 7
After the first round of baking, press a strawberry slice into each cookie gently. If any cracks appear on the edge of the cookies, you can gently press them back together. Don’t push the strawberries too hard into the cookie.Step 8
Bake for a final 10 minutes. Let the cookies cool completely before eating. It is best to store your completely cooled cookies in an airtight container in the refrigerator.

Last I checked, Stevia in the Raw contained maltodextrin, which is a pseudonym for sugar. NOT keto! Use a true keto sweetener, like erythritol, monk fruit or allulose.

Yes. Coconut flour can be replaced with fine-ground almond flour. Your cookies will bake to a denser texture, but you can combat this by whipping your cream cheese for extra time to incorporate more air.

Tasty, but I found them a bit dry. I think they would be better without the strawberry cooked on top. I may try them again, unsure at the moment.

Almond flour is not a 1:1 sub for coconut flour. Coconut flour is much more absorbent.

Yes you can. The texture may be slightly denser and you'll be missing the coconut flavor, but almond flour is a good sub!

Can I make a huge batch and freeze them? I have a 48oz block from Costco.. Won't do that again 😂

Since this recipe uses fresh strawberries, they may not seem as appetizing once they are thawed from frozen. You could leave the strawberries out and enjoy the cookies plain from frozen. In fact, these cookies are so soft, they could make a yummy frozen treat as well!

Stevia in the Raw Has Maltodextrin as the main ingredient. Maltodextrin has a high glycemic index about 106-136. Not good for someone who needs to keep there blood sugar under control. I wrote to this company and they totally do not care - they said that “in the raw” does not mean their product is healthy.
