Step 1
Finely chop the peppers. Heat the olive oil in a large pan over medium heat. Add the bacon and peppers. Cook for 10-12 minutes, stirring occasionally.Step 2
Peel and roughly chop the avocado. Slice the mushrooms. Roughly chop the parsley. Add the mushrooms, avocado, and parsley to the pan. Season with salt and pepper.Step 3
Mix well and cook for 15-20 minutes over medium heat. Stir occasionally. Taste and optionally add some more salt or pepper.Step 4
Transfer the mixture to serving plates. Serve with some shredded mozzarella and garnish with parsley. Serve immediately.
