This vibrant salsa is simple yet tasty and makes a great accompaniment to meat dishes.
The recipe itself is to give four small portions as a side or relish to accompany your meal however this would also serve to feed two as the base of a salad.

Ingredients
Scallions
2 medium - 4 1/8" long
Cilantro
1 tablespoon, chopped
Peppermint, Fresh
1 tablespoon
Extra Virgin Olive Oil
1 tablespoon
Hot Chili Peppers, Green, Raw
½ each - approx 4" - 6" long
Lime
½ each - 2" diameter
Cucumber
¼ large - 8 1/4" long
Salt
¼ teaspoon
Black Pepper, Ground
⅛ teaspoon

Step 1
Finely dice the cucumber and scallions and add to a small mixing bowl. Slice and de-seed the chilli and finely chop, add to the bowl also. Toss to combine.Step 2
Roughly chop the cilantro and mint leaves and add to the bowl. Season with a little salt and pepper and mix well.Step 3
Add the olive oil, lime juice and the zest of half the lime. Give everything a good stir and leave for 10 minutes to infuse the flavors before serving.

I made mine without the peppermint and removed the seeds from the cucumber. It is fresh and a good accompaniment.
