Skip the toast and keep the avocado! This Keto breakfast recipe is a great way to eliminate carbs in your morning while simultaneously starting your day with a huge dose of healthy fats and protein. Avocados are baked in your oven to soften into a creamy texture. The avocados are filled with baked eggs and topped with green onion. Use a spoon to scoop your breakfast and enjoy! For this recipe, try to select avocados that are slightly firm and green still. The baking process in the oven will soften the fruit without turning the flesh brown. You can also store any leftovers, covered in the fridge, for an additional day without the avocados becoming too oxidized.

Tips for choosing perfect avocados

Choose under-ripe avocados at the store. Let them soften on your countertop at room temperature until they’re just about to be ripened. Then, you can move them to your refrigerator. Remember, you’ll also bake the avocados, which will soften them too.

How to bake eggs

If you want runny eggs in your avocados, bake them for only 20 minutes. For medium-done eggs, go for 25-30 minutes. For hard-done eggs, they’ll need 30 minutes or longer.

    Preheat an oven to 400 F (200 C). In a pan over medium-high heat, cook the bacon until crispy. Set the bacon aside to cool and roughly dice it. This will be used later.

    Prepare the avocados by slicing them in half and removing the pits. Remove some green flesh from the center of the avocado halves – enough to allow an egg to fit in each. Feel free to eat the removed fruit as a pre-breakfast snack!

    Arrange the avocado halves in a baking dish. Then, crack an egg into each half. Distribute the salt and pepper over the tops of the eggs.

    Cover the dish and bake the eggs for 30 minutes. For a runny egg, cook for only 20 minutes, or you can cook it to your preferred doneness. Chop the chives and distribute the garnish over each egg. Do the same with the diced bacon from Step 1. Enjoy!

    Same with airfryer. Chopped pepperoni instead of bacon, added shredded cheddar cheese and drops of hot sauce. Pretty dang good.

      Actually not bad. I made some changes. I air fried them at 400 for 10 minutes as suggested in comments, I also didn't have any bacon so I put about 4 pepperoni slices in the air fryer for 6 minutes (while cooking the avocado) YUM. did it run over? Yes. But that's why I put it in a tinfoil boat. Also I second the person that said just to run a spoon or butter knife around the edge of the avocado and just dumping it all together and mixing before eating.

        I love avocados so decided to give this recipe a try. I read through the comments prior to cooking. I used my large muffin pan and used aluminum foil to coat muffin slots(coat with cooking spray). I only made one serving, one whole avocado cut in half. I removed the avocado from its skin. I also covered with foil while cooking. I cooked for 20mins. Everything was cooked. If you want and runny yolk I would suggest cooking for 15 mins. I added bacon on top along with salsa. This recipe isn't bad, I don't like the warm avocado, other than that it's definitely worth trying. I probably won't make this again because of my avocado preference.

            I like my egg yolks runny. To do this, I only baked mine for 15 minutes. Also, I salt & pepper the avocado before cracking the egg into it and s & p the top, too.

              I could not get it down. Tastes like the rind they were cooked in. Was I supposed to take them out of the rind?! Recipe did not mention that little detail. Wasted a beautiful avocado.

              I loved these. I used my air fryer at 400 for 11 minutes. I only made a half of one avocado. It was delicious. I made a little tin foil boat to sit it in, think individual silicone ramekins would be better. A small or medium egg would be better. I lightly pierced the yolk so it wouldn’t explode (wasn’t sure if it would or not). My large egg overflowed, but it was crispy down the overflow sides so still good. I put my cheese and bacon and chives on the plate then flipped the cooked avocado upside down on top and took the skin off with a spoon. Copped it up and yumm. Will do both half’s next time.

                I've made baked avocado egg many times. As one review said, it warms the texture of the avocado up to be similar to a baked potato. When I bake mine, I use a muffin tin to hold the avocados in place. I also put some foil onto of the muffin tin and slightly push the foil into each cup. This does take a little longer to make and is worth it.

                  Tasted nice but such a faff and the whites of the eggs never cooked and the yolks were rock hard. Ended up finishing in microwave Won’t be having again

                    Different...but I like it! Baking the avocado gave it a potato texture. So the dish kinda reminded me of eating a eggs and potato hash mix. LOL I would definitely make it again

                      P.S. the egg did run out of the avocadosnat first , so I put each avocado in it's own small glass bowl which kept the avocado and egg from moving.

                      My avocados were not ripe enough and I had a hard time getting the pit out. I ended up microwaving it to soften. The egg ran right out of the avocado center. I finished by microwaving. It tasted ok. Not worth the effort. I like the recipe where you cook the eggs separately and put avo on top

                        To ripen an avocado overnight, put it in a brown paper bag with a ripe (not green) banana. However, the best way to ripen an avocado is at room temperature on the shelf in front of the kitchen window. A hard avocado will ripen in about 3 to 5 days. For this recipe, the avocado must be soft to the touch but not overly ripe. I only buy hard avocados and keep them in the refrigerator. I ripen one, and then I put out another one when it's ready to eat.

                      This is one of my favorites. I’ve actually had a recipe for this for years now. I use it regularly. I agree with the above spray your pan first. I add a bit of salsa to the top of mine. Or a bit of cheese. Whatever looks good to you.

                            Lovely flavours. I’m glad I read the reviews before I started. I poached the eggs and microwaved the avocado. Lovely for a weekend breakfast.

                                  Do you eat 1 total avocado and 2 eggs? Or, 2 total avocados and 4 eggs? Just wondering what the numbers are for 1 serving. Thanks!

                                    This was very good the second time with some adjustments. I leveled the avocado by slicing a small amount off the bottom. Also sprayed the pan with cooking spray & added a Tbsp of water to bottom of pan. I seasoned both the avocado & eggs with salt & pepper & Moroccan Harissa. Turned out very good.

                                        Save yourself some time. Just eat 2 avocados, 4 eggs, and a strip of bacon. The recommended size avacado can't hold a large egg so you end up basically hollowing out the whole avacado and eating it alone anyway. If you don't be prepared to lose a lot of egg white as it spills over the side of the avocado due to the cavity not being big enough and/or due to the fact avocados don't lay flat. Buy bigger avacados? Throw off your macro's. Fun concept, wasted time and energy
