Our Keto Spicy Mexican Cheese Chips make the perfect Keto cheese chip. Super easy to make, they require minimal ingredients for a giant flavor boost. Place shredded cheese onto a parchment paper-lined plate and into the microwave to cook. Simply cook on high heat until browned! Once removed from the plate, they will crisp as they cool. We have seasoned ours with a dash of cayenne and paprika. For other seasonings, though, the sky is the limit to how you want to flavor them as long as they are Keto and Low Carb friendly spices. You will love these easy microwave cheese chips, as they are one of the easiest Keto snacks.

How do you know the chips are done cooking?

The cheese chips are done when they are evenly browned throughout. You are going for a golden brown color. If they are dark brown, you have gone too far. The chips are soft when they exit the microwave and crisp as they cool.

The best type of cheese for this recipe is shredded cheese. Shredded cheese comes in all flavors and assortments, so feel free to swap the mozzarella cheese in this recipe 1:1 with any other shredded cheese.

What other variations can I try?

    Place a small piece of parchment paper on a microwave-safe plate. Be sure the parchment paper is small enough that it won’t hit the sides of the microwave as the turntable moves. Allowing this will ruin the chips and deform them. Take half of the cheese (about ¼ cup) and sprinkle the cheese into three piles separated well from each other on the parchment paper.

    Cook the cheese for about one minute. However, keep an eye on them because all microwaves are different. Cook the cheese until they are nicely golden brown throughout.

    Allow them to cool slightly before removing them and placing them on a paper towel-lined plate to cool. Once cool, they will crisp and firm. Sprinkle with a dash of cayenne pepper and paprika, if desired. Feel free to use other Keto-friendly seasonings and get creative!

    They sell something similar to these in American Supermarkets but they are about the size of a quarter which makes them awkward for dipping in a social setting. I will make these, it should be said that you can make these in a nonstick pan on a low heat if you are inclined to do so.
