Keto Fathead Pizza Base
This keto pizza base is the perfect vehicle for all your favourite low carb toppings. Once the dough is prepared you can part-bake it then finish it off with toppings of your choice.
This dough is so versatile we have also used it for our low carb mini pizzas and low carb sausage calzone.

Ingredients
Mozzarella Cheese
1-¾ cup, grated
Food Cupboard Home Baking Almonds Ground by Sainsbury's
5-½ ounce
Butter
1 tablespoon
Parmesan Cheese
1 tablespoon, grated
Cream Cheese Spread
1 tablespoon
Raw Egg
1 small
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Add the mozzarella and butter to a heat proof bowl. Create a double boiler over a pan of boiling water and melt the butter and cheese together. Stir well to combine.Step 2
Allow the mixture to cool a little then transfer to a food processor along with the Parmesan, cream cheese, 1 cup of the ground almonds, salt and pepper. Blend well to combine.Step 3
Add the egg and blend again.Step 4
Add the remaining ground almonds to the food processor and blend again to form a sticky dough.Step 5
Turn the dough out on a large sheet of plastic wrap and form a rough log shape. Wrap in the plastic wrap, twisting the ends to secure. Transfer to the fridge for 20 minutes to firm.Step 6
Once firm, roll the dough out as required. This is best part-baked for 10 minutes as a whole pizza base at 380 degrees Fahrenheit, before adding and cooking your toppings.

I just made essentially this recipe, except I used home made ground sunflower seed flour & psyllium husk, cream & water instead of an egg. I over ground the sunflower seeds because they turned a little sticky instead of floury, but it didn’t matter. When I mixed it all up (by hand) with melted cheese (Edam & cream cheese), it turned into a nice dough which I could roll out between baking paper after resting in the fridge. I baked it in the oven for 10 mins, during which it puffed up dramatically. I pulled it out, punched it down, topped it with a bit of tomato paste & dried herbs, mushrooms, salami, a left over kofta, & more cheese, then baked it again for just under 10 mins. It wasn’t a crisp crust, I just folded it to eat it, but it most certainly tasted like pizza! 😘

The recipe says to add 1 cup of ground almonds. Then later the recipe says to add the rest of the ground almonds. But the ingredients list says only 5.5oz ground almonds total (that’s not even 1 cup). I’m very confused.

If you actually weigh the almond flour it is more than 1 cup

The texture isn't pizza crust exactly, more like a crunchy thin, savory cookie, but if you like cheese, you'll love the flavor of this crust. I made a traditional pepperoni pizza with this, as well as a Mediterranean one. Both were great. Next, spinach and blue cheese!

I used recipe Fathead Pizza the little pine.com which included almond flour, mozzarella cheese, cream cheese, egg, garlic salt, low carb pizza sauce, and pepperoni. See recipe on their Pinterest site. I changed nutrition info as info on her site. DELICIOUS.

I've divided by 4, parbaked them and then froze 3 of them, haven't tried freezing the dough

Was really good compared to other keto crusts! Still not the same as real dough but definitely will eat this again!
