Ingredients
Vegetable Broth, Bouillon Or Consomme
4 cup
Baby Spinach
3 cup
Celery
2 medium - stalk - 7 1/2" to 8" long
Creme Fraiche
2 tablespoon
Shallot
2 tablespoon, chopped
Garlic
1 clove
Lemon Peel Or Zest Raw
1 tsp
Unsalted Butter
1 tablespoon
Recipe Steps

Step 1
Thinly slice the celery and crush the garlic. Melt the butter in a large saucepan over a low/medium heat. Add the celery, garlic, shallot and lemon zest and sweat for 2-3 minutes until tender and fragrant.Step 2
Add the vegetable stock and bring up to a gentle boil then simmer for 2-3 minutes.Step 3
Add the spinach and cook for a minute or two until wilted.Step 4
Transfer to a blender or use a hand held stick blender to process until smooth.Step 5
Stir through the creme fraiche and warm the soup through again if required.

I used sour cream as a substitute for crème fraiche but other than that I followed the recipe. It’s a very tasty warming soup that I will certainly make again. It’s a quick, economical, delicious soup. The aroma of butter left behind is amazing.

During covid 19 isolation I had to use what I had available so used chicken broth and sour cream instead of making crepe fraiche.
