My all-time favorite salad at the moment is this super popular raw carrot salad! We love it so much because it is excellent for those on Low Histamine and Low Carb diets. Made with only three simple ingredients, raw carrot salad is easy to make. Raw carrot is said to have a unique antimicrobial fiber that binds to endotoxins and excess estrogen. Therefore this type of salad is touted to balance progesterone, estrogen, and cortisol in the body. These endotoxins absorbed in the gut from harmful intestinal bacteria have been said to contribute to autoimmune issues. All these ingredients combined could help the hormonal environment in your body by healing the gut. Give this Low Histamine Low Carb recipe a try; it will be tasty if anything!
Do I have to use flax oil?
No, feel free to use other Low Histamine friendly fats like coconut oil. We prefer flax oil because the flavor pairs so well with the carrots to bring out their sweetness. If you choose to use coconut oil, it is said to have antibacterial properties that carry into the gut.

Apple cider vinegar substitute
In small quantities apple cider vinegar is low in Histamine, but is still not tolerated by some. Some people can handle up to 1 teaspoon at a time which is what this recipe is written for. If you want to substitute the vinegar feel free to use 1 teaspoon of cranberry juice as it is very acidic like vinegar.

Carrots, raw
1 large - 7 1/4" to 8 1/2" long
Flax seed oil

Apple cider vinegar

Step 1
Use a vegetable peeler to peel the carrot into long strands. Doing so keeps the carrot fibers long and intact. Feel free to use a box grater, but we like the texture the vegetable peeler gives the carrots. There will be some carrot left that you cannot peel, but this makes for a good snack.Step 2
Once the carrot is peeled, add the oil, apple cider vinegar, and sea salt. Stir well to combine and serve immediately! The recipe can also be batch prepped to have carrot salad prepared for subsequent days.
