Low Carb Sweet and Crunchy Broccoli and Bacon Salad
This sweet and crunchy salad is packed with nutrient dense broccoli, crisp bacon, toasted almonds and drizzled with a sweet and zesty dressing.
This is a great light lunch option for two or a side salad.

Ingredients
Bacon
4 slice - 6" long
Broccoli Florets Raw
2 cup flowerets
Olive Oil
2 tablespoon
Almonds, Raw
1 tablespoon, sliced
Maple Flavored Syrup by Lakanto
1 tablespoon
Lemon Juice
½ tablespoon
Red Onion
¼ medium - 2 1/2" diameter
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon
Recipe Steps

Step 1
Heat a tablespoon of olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden.Step 2
Whilst the bacon is cooking, roughly chop the broccoli florets into small bite sized pieces and thinly slice the onion. Add to a serving bowl.Step 3
Once the bacon is cooked, set aside and add the flaked almonds to the skillet. Cook in the bacon grease for 2-3 minutes until golden.Step 4
Roughly chop the bacon and scatter over the salad.Step 5
Scatter the flaked almonds over the top.Step 6
Whisk together the oil, syrup, lemon juice, salt and pepper and drizzle over the salad to serve.

Delicious!! I used a no carb fatty store bought vinaigrette dressing instead, but still great!
