Easy Low Carb Lunch for Beginners

Who said Keto has to be hard? Not Carb Manager! This easy Keto lunch recipe for beginners is also for anyone who just doesn’t want to be stuck in their kitchen for the afternoon. You’ll need your oven for this recipe, but you can see making this lunch is quick and easy - less than 20 minutes! You could also incorporate this recipe into your meal prepping. Meal prepping doesn’t have to take hours either! If you prefer to avoid the complicated casseroles and mock recipes that flood the internet, shoot for simple foods that you can put together easily. That’s why all you need for this recipe is some deli meat and cheese, nuts and seeds, and avocado.

What is string cheese?

String cheese may or may not be available to you, depending on where you live. It’s a mild cheese made with whole or part-skim milk and is very similar to mozzarella cheese. With that in mind, you can easily substitute string cheese with equivalent strips of mozzarella cheese. Provolone can also be a substitution here.

Recipe variations

Don’t let your lunch get boring! You can substitute different ingredients to keep things interesting and to make sure your body is absorbing all the nutrients. Switch slices of chicken out for turkey, ham, or roast beef. Some cheese substitutions are mentioned above. Other Keto nuts and seeds that can be used in your granola are cashews, pecans, and pumpkin seeds.

I don’t like raw avocado

Don’t like plain avocado? No problem! Although you won’t be able to substitute the avocado with a different fruit, you can substitute it with cubes of cheddar cheese. If you feel cheesed-out in this recipe already, try substituting the avocado with cubed zucchini sauteed in olive oil or coconut oil. You can drizzle extra virgin olive oil on any cooked veggies too.

  • Almonds

  • Walnuts

  • Sunflower seeds

  • Step 1

    Turn on an oven to preheat to 375 F (190 C). Lay down slices of chicken and a full piece of string cheese on the right side of each slice. Roll the string cheese up in the chicken slices, and place them on a sheet tray lined with parchment paper.

    Place the wrapped string cheese in the oven to bake for about 8-10 minutes. Watch for the string cheese to melt, which may come out the sides a little. Make sure to not overcook the cheese.

    Wait until the wrapped string cheese is almost done baking to make your warm granola. Add whole almonds, chopped walnuts, and shelled sunflower seeds to a small pan. Toast the nuts and seeds on your stove over low heat for about 2 minutes. Wait until the nuts and seeds smell fragrant.

    Add your warm chicken and cheese sticks and granola to a serving plate. Add cubed avocado to the plate and sprinkle a pinch of salt over it. Enjoy as finger food or with silverware.
