Add the erythritol, cream cheese, lemon juice and vanilla to a food processor. Blend until smooth and creamy.Step 2
Add the cream to a mixing bowl and whisk vigorously until thick and fluffy. Alternatively you can use a stand mixer with whisk attachment to whip the cream.Step 3
Carefully fold the lemon cream cheese mixture into the whipped cream until well combined. Refrigerate until ready to serve.

Great and easy recipe. I made 1 serving, but used liquid Stevia instead of Erythritol, and cinnamon powder instead of vanilla extract. Then I added some raspberries and blackberries (which is great if you need to adjust your carbs at your keto day plan!)
