Ingredients

  • Zucchini

    ¾ cup, shredded

  • Step 1

    Preheat an oven to 350 degrees and line a sheet tray with parchment paper. Slice ½-inch discs from a zucchini (try to pick one that is a uniform size). Then slice the discs into half circles.

    Whisk together your egg in a bowl and mix together the remaining dry ingredients in a large ziploc bag.

    Coat all the zucchini in the egg. Transfer the zucchini to the ziploc bag. Close the bag and shake to fully coat all the zucchini pieces. Finally, arrange all the breaded zucchini onto the sheet tray (you may need to bread the zucchini in 3-4 additions).

    Bake the tray for about 25 minutes. Flip all the zucchini over and then bake for an additional 10 minutes. Enjoy hot with your main dish!
