Low Carb Puff Cereal
When the cold cereal craving strikes this is the recipe to remedy it! Full of good-for-you ingredients, the cereal is great with cold milk over it or as part of a snack mix with nuts and dark chocolate! The dough is stiff, but will be pipable with a bag. You will need to use your fingers to break the dough from the tip if it does not come loose itself. Pipe the dough in batches so it will squeeze through the tip easier. I used a Wilton #804 tip with a ⅜” opening.

Step 1
Preheat an oven to 275 F. Combine the flours, sweetener, baking powder and salt. Mix to combine.Step 2
Add in the eggs, vinegar, vanilla, milk and melted coconut oil and mix until the mixture comes together.Step 3
Add into a piping bag fitted with a ⅜” round tip and pipe balls into ⅓”-½” pieces trying to keep the balls as round as possible. I had to use my hand to break the dough from the piping bag as they came out.Step 4
Using a wet finger, press the tops of the balls down to round them out and ensure there are no rough edges. Alternatively, you can roll them into a better ball with your hands.Step 5
Bake for 10 minutes then using a spatula move puffs around and bake for another 15 minutes. Allow puffs to cool on the baking sheet completely before adding milk!

All went according to the directions and the batter taste great. However, 275 was doing nothing but warming the dough. I had to turn it up to 400 to get the balls to brown. And they never crisped. They are delicious little cake like balls.

My batter was not stiff at all. Piped very easily. Will see how it comes out when baked

this does not work. It’s too crumbly to roll small balls. It won’t go through the piping top. It is not worth the trouble to make this.

Could you make like a flat whole piece and after you cooked it just cut it into squares?

Really delicious! I used 3 tsp of monk fruit in the raw sweetener, as I dont have swerve, and it came out great. Easy to make a batch on the weekend to make the weekday planning a bit easier.

How do these hold up pre-prepared and is stored, like a regular boxed cereal?

They store the best in an airtight container in a cool dark place and will store well like this for up to 3-5 days.
