This recipe is super easy to prepare and doesn't require any special cooking skills. The creamy cauliflower base is flavored with bacon and then topped with some more bacon and cheddar – a perfect balance of smoky bacon, cheese, and tender cauliflower. Step 1
Cut the cauliflower into smaller florets. Add the cauliflower to a deep pot. Pour in enough water to cover and bring to a boil over medium-high heat. Cook until the cauliflower is completely tender.Step 2
Remove the cauliflower from the heat and drain. Transfer the cooked cauliflower to a bowl. Using a potato masher, mash the cauliflower. The cauliflower doesn't need to be completely smooth.Step 3
Cook and crumble the bacon. Shred the parmesan cheese. Finely chop the onions. Add the cream cheese, sour cream, onions, parmesan, and ¼ of the bacon to the cauliflower mixture. You can add a tablespoon of bacon grease to the mixture for extra flavor, but that's completely optional. Mix well.Step 4
Shred the cheddar cheese. Preheat the oven to 350°F (175°C). Grease an 8-inch (20 cm) round casserole dish with some butter. Transfer the cauliflower mixture to the prepared dish and top with shredded cheddar and the remaining bacon.Step 5
Bake, covered, for 15-20 minutes. Remove the covering and continue to bake for another 8-10 minutes. Optionally, garnish with some freshly chopped parsley before serving. Enjoy!
